Don't forget the people in Cuba - they appreciate and very much need clothes, school supplies and toys from us. When we took our family, we brought toys and clothes that my family and I weren't using anymore and bought school supplies at the dollar store. The smiles on their faces were priceless.
Other than that, there are so many places to go so we took our children on the local buses and out in the villages, rented bicycles and drove around handing out stuff. Don't be afraid to leave your hotel or resort - you're there to see their country and experience their culture, not just to see the sand and surf.
Anyway, that's my 2 cents.
